But there's a catch: to digest yeast protein, we have to break open the tough yeast cells first. Scientists tested different ways to do this. They used the yeast's own natural juices (a process called autolysis) or a special enzyme from papayas (papain) to weaken the cell walls. After softening them up, they smashed the cells open mechanically. By looking at how these steps changed the yeast cells, they are finding the best and most sustainable way to get the protein out so we can use it!
