Rice bran wax-structured macadamia oleogels and temperature-responsive water-in-oil emulsions: Fabrication, characterization and astaxanthin delivery.
Summary: Scientists are looking for healthier ways to make solid fats, like butter, using healthy plant oils. In this study, they used a natural wax from rice bran to turn liquid macadamia nut oil into a solid gel. This gel is special because it melts when heated and becomes solid again when cooled. They also used it to make a stable mix of water and oil without needing any extra chemicals. Finally, they tested how well this gel could deliver a healthy nutrient called astaxanthin to the body. They found that while the gel is very stable, the wax actually slows down how fast the fat breaks down during digestion, which lowers how much of the nutrient the body can absorb.
